Tell me your favourite tracks from official or fan games (please name the game).

it's extremely hard for me to pick A Favourite, but just to listen to on its own, something from the list of:
The Venerable Ancient Battlefield ~ Suwa Foughten Field (10.0 Mountain of Faith, Stage 6 Boss)
Bloom Nobly, Ink-Black Cherry Blossom ~ Border of Life (7.0 Perfect Cherry Blossom, Stage 6 Boss)
Entrust this World to Idols ~ Idolatrize World (17.0 Wily Beast and Weakest Creature, Stage 6 Boss)

I also, when playing, look forward to some of the stage musics a lot, because for me the way the music flows together with the stage progression and midboss attacks is really stirring:
The Capital City of Flowers in the Sky (7.0 Perfect Cherry Blossom, Stage 4)
Eastern Ghostly Dream ~ Ancient Temple (7.0 Perfect Cherry Blossom, Stage 5)
The Primal Scene of Japan the Girl Saw (10.0 Mountain of Faith, Stage 5)

if it was a gun to the head, pick one situation... I think I have to go with Suwa Foughten Field, but that's a rough sophie's choice
 
i think if im gonna pick just one track to keep as my number 1 then i will pick candid friend from touhou 10. the beginning gives off huge water vibes and the song in general just sounds melancholic and sweet, like a friend that doesnt want to fight you :)
 
Alice in Wonderland from Touhou Mystic Square is one of the best official ones in my opinion.
For fan-games, I'm picking either the Medicine Boss Battle song (Queen of Dolls that Ushers in Happiness ~ World-Stepping Little Mind) or ConvAria, both from Little Doll Queen. Or maybe like Hands that Can't Reach the Moon ~ Moon Child from Len'en BPoHC, but I'm, not sure if that counts as a fan-game. I don't play many Touhou fan-games.
 
For me it's a tie between "U.N. Owen was her?" from Touhou 6 and "Hartmann's Youkai Girl" from Touhou 11. As for fan games, it's "The Kappa Way as Said ~ One Way Accelerator" from Subterranean Hatred.
 
Solar Sect Of Mystic Wisdom. Both the original and the 17.5 remix of it are amazing.
 
I flip-flop on a favorite track often, but I think if I had to pick a singular one it would probably be 恋色マスタースパーク/Love-Colored Master Spark from Imperishable Nights. Another one I like a lot that I think needs more attention is 厄神様の通り道 ~ Dark Road/The Road of the Misfortune God ~ Dark Road from Mountain of Faith.
 
btw i'd like to change my answer to romantic children from mystic square, i've always loved that one but its REALLLY grown on me since then, its definitely one of, if not, the most well written touhou theme ever
 
Kobito of the Shining Needle ~ Little Princess from DDC is one of my personal favorites. The feel of the song, from the power chords of the backing guitar to the high notes of the Zunpets, nails what can best be described as Shinmyoumaru's last stand against the heroines. I also feel that the composition of the song is one of Zun's better works. A grand theme for the tiniest of 2hus.

The Sea Where One's Home Planet Reflects from LoLK is another song I'm fond of for its raw emotional value. It's pretty somber for a Touhou piece, almost like the ashes of what's left when the fire of Pure Furies ~ Whereabouts of the Heart finally burns out. There's a very nice acoustic rendition of the song, and I swear it always causes me well up when I hear it.

Demystify Feast from Touhou 7.5 (Even though the version from Magical Astronomy is better, but you asked about games.)
All of Suika's themes are fire.
 
touhou 16 hsifs stage 4 - illusionary white traveler is very good. i really like the music syncs with the fairy brigade at the end of the stage.
