Fumo Racing from what I have seen is more or less a meme Mario Kart game, but actually good. It would be easy to slap a couple favorite figmas into carts, but they have a variety of vehicles to ride, each with their own unique playstyle. Different acceleration, turning, airtime. And its made by a dude or two in his free time. I would like to see more powerups, but so far its progressing well, and I think they will add them in eventually.
Honestly, its nice to see a Mario Kart competitor on the indie side. Back in the 90s there were all kinds of racing games, now Mario Kart's only competition is Gran Turismo. Indie Studios probably make racing games, somewhere. But I've never seen them. The game's focus on airtime and jumps give it a unique gimmick as well. Which help it stand out in gameplay and design.
