I've played far more than just two Touhou games, but as I have to be pretty careful with dodging the bullets, I'm not sure really any of the bosses are "boring" for me.I can't speak on since this I have only played 2 Touhou games and haven't found anyone boring or annoying (anymore). But you guys have certainly played much more than me.
I quite like Seija's attacks. I think they're interesting, and even a bit fun. Same with Sukuna's fight in the same game.I wouldn't say that an entire specific fight is annoying, it's more like certain phases or spell cards with bad gimmicks or poorly-thought out design. Seija Kijin's control-reversing gimmick is a prime example since the difficulty comes from fucking with the player's muscle memory instead of providing a challenging or unique pattern. Another is Koishi Komeiji's 'Depths - Genetics of the Unconscious', which is pretty much a survival spell card that requires you capture it like a normal one.
If you want what I consider to be my least favorite fight from the series, it's (ironically enough) Evil Eye Sigma. You can't focus through bullet-heavy patterns, you get extremely limited resources, it fucking kills your hand if you don't have an autoclicker to fire, and the kamikazee laser that comes right out of nowhere when you kill him is an extremely cheap way to screw over players with no lives left. Most these problems are a byproduct of SoEW's design, but it still makes for an extremely frustrating and unfun fight.
Though, there are a few which I would consider "annoying" to fight. At least one example is Parsee. Her attacks are interesting, but her patterns (specifically the ones which chase you) keep running my plays into the ground. I think another example would be Sekibanki. Much like with Parsee, her attacks are interesting to me, but she's just so gosh darned annoying to fight...
I don't really find much interest in her design or character either (while I do quite like the designs and characters of Wakasagihime and Kagerou).
Sounds like you struggle most with streaming and positioning. All the bosses mentioned above lean very heavily on bullets/lasers than are aimed at the player while scattering other junk around the battlefield to distract them. Some advice you may or may not find helpful: Focus on moving as little as possible during these spell cards. These attacks prey on the player panicking and moving around everywhere, which only scatters more bullets and makes them harder to dodge. If the boss moves around a lot, then focus on getting them to shoot their focused shots in an area you're not going to be in before quickly ducking under them to return fire.Ah. I can never seem to fight her without either timing out or getting blasted to pieces by her.
My hatred for her IN fight probably surpasses my annoyance at Parsee and Sekibanki's boss fights.

That said, Parsee is one of my favorite fights in the series. All her spell cards are extremely unique and additionally based on Japanese folk tales (or Shakespeare in the case of 'Green-Eyed Monster'). Green-Eyed Jealousy is also one of SA's best tracks, and that's saying something since the whole OST is peak ZUN music.
Though, another thing to note is that the Scarlet Team definitely makes Reimu's fight less painful for me. Regardless, I still never seem to emerge unscathed after fighting her. In comparison, I've gotten past Marisa at least a couple times without losing maybe one or two lives.The main problem I have with Reimu in IN is her moving all over the place. That reminds I actually can speak on this. I had only played through DDC on normal, with one or two attempts in easy. I did reach the point where I could get to stage 4 with some difficulty (and lots of bombs.) I actually consider Youmu's fight to be one of my favorites so far. I like that slowdown mechanic of hers. Of course, as I mentioned before, it could be a different story if I played on normal...Youmu (i can't get used to her slowmo that is often the reason i either have to use bombs or just get hit)
Any extra stage boss, they're literally at the difficulty of Lunatic, the attacks aren't all worst, but hell do i really have to go through 213742067 spellcards with 4 lives left?
I've still yet to reach anywhere near Orin. She's one of my favorite Touhou characters, though I have no idea how good I'd be on her fight even on easy.Rin is annoying and she can be fixed by letting Okuu nuke Gensokyo so no one has to fight her ever again. I can never tell where the wheels are going to end up in Former Hell's Needle Mountain and she makes you run around the screen so much because her fairies.
I liked her fight a lot on normal and it's definitely my favorite in PCB, but she spawns a lot of bullets each wave and bullets from one wave can stick around for the next. I think my strategy for one of her slowed time spells was just to always bomb on the second wave because of how much she can throw at you, especially since you may not be in a safe spot once time returns to normal.I actually consider Youmu's fight to be one of my favorites so far. If you get the timing down with moving back and forth to start dodging them when she locks their position in, the spell card actually isn't terrible.
