Do you guys prefer ZUN's old artwork or modern designs of characters.

in no beliefs, folklores, mythologies, etc. demons are enemies to sunlight or garlic
I think the reason for that is because even early Christians understood that demons are spiritual beings much like God Himself, so why would they be affected by such things as sunlight, or especially, mere garlic?
That said, I'm still really only in the beginning stages of studying about pre-1800s Europe, so I only really know a basic amount of these sorts of things so far.

If you want to understand demonology in a better manner you have to study Hebrew mythos not only Christian. Most of the Demon stuff lies before big J was born.

A big one was Solomon enslaving like 72 (iirc?) of them to build a temple.

Yeah. It certainly does, though you have to be careful as a lot of those sorts of stuff were made after Jesus was born. I'm a Christian myself, so despite me considering some Jewish demonologies as "canonical" even after Jesus was born, it's very hard to know which ones could be fact or mere fabrication.
Though I'm someone who knows many elements of both Hebrew and Christian lore already mainly from reading the Bible itself.

Neither are vampires? That's a contemporary convention, traditional vampires are pretty indifferent to sunlight. Even in the earliest of folk tales they aren't weak to sunlight, they're just akin to wraiths or zombie-like creatures who get up from their graves at night and attack unsuspecting victims, later returning by dawn to their graves.
But nowadays vampires are known from being weak to sunlight, and nobody seem to see vampires as immune to sunlight, unlike with demons.
 
ZUN's older artwork, In my opinion, was phenomenal and dream-like. I greatly appreciate his pieces from pre-SA. There is something about it with the addition of the stories that feel so magical. His miscellaneous artwork was very lovely too. ❤️
There are occasions where his artwork afterwards is not that bad; Some better than others. Individual character art styles may also be hit and miss for me, but this doesn't mean they are horrible.
SA to HSIFS weren't that bad to me. The titles would be out of order in regards to my personal favorite in artwork from this era.
After HSIFS would be my least favorite, I'd say.

I agree with everything you said, except for me, HSiFS is one of my favorite Touhou games. I find it's story and characters (especially Okina herself) to be very intriguing and the atmosphere of the game is pretty heavy and fits into Touhou to me. The addition of Cirno and Aya as playable characters in the game makes me find it even more interesting.
Of course, despite that, the earlier Touhou games are simply very beautiful in how they are executed. The early games had that deeply "dream-like" feel (something which I feel nostalgia for far beyond just Touhou) especially made possible because of the artwork. HSiFS has a "dream-like" feel to it as well, but unlike the early games, it's "dream-like-ness" is mainly because of how surreal it feels.
Well, regardless, the old artwork for Touhou just looks so good.
Because of this thread being about ZUN's early artworks, I should probably go to the Touhou Wiki and grab some of the various artworks he made between around 2000 to 2003 or so. As I said before, some of them can be pretty impressive and give off the height of that "dream-like" feeling.

Same here! HSiFS was the first game I had tried in the series. I do love the story as well and Okina is another character that interests me.

Many people just consider Okina as "another Yukari", but the story of HSiFS and the lore of Okina herself makes it pretty clear that she is much different from Yukari (and possibly more brutal than her too), so I'm definitely glad you find her interesting too!
I didn't play HSiFS for a while after I got into Touhou, but after I played it, I started liking it more and more.
Despite the art for HSiFS being when ZUN's artstyle started to become objectively worse, the character designs in it still look pretty good.
