7zip is more efficient than zip. AFAIK, new versions of Windows 11 support it out of the box (not sure of password-protected ones), while for 10 and below, a third-party file archiver has to be used for it, like 7-Zip and WinRAR.

Does alt+tab or F11 not work? If so, you could go into your display settings and lower your resolution, and the game will look bigger. I also heard of Magpie, a window upscaler, but never used it nor checked the source code. There's also Lossless Scaling, but that's paid and proprietary.
Did you actually manage to update Touhou? When I manually updated it with Wine, it spoke of a Z drive in the update message, but the game didn't update. To make it work, I had to launch winecfg, and at Drives create a D directory, and make it point to the game folder.
I think the second error might be solved by emulating Japanese locale. The first one is a vpatch error. You might have luck if you grab vpatch from the Touhou wiki (from the Download button below "Vsync Patches" at the title) and replace the vpatch files with those.

Here's mine, with my 1x1 black pixel wallpaper. It just really doesn't distract me much. Also my taskbar only summons when I hover my mouse over there.
The vpatch error says it can't find the executable, or something like that. Could you try re-unzipping the game and trying again? If it still won't work, try running vpatch.exe directly and also the 東方紅魔郷.exe to see if those will work.
